Sleepytime Vanilla Coconut Latte

This is an excellent recipe to help calm you before bed and to provide your brain with fuel throughout the night to prevent you from waking early. Sometimes the reason we wake early is that our brain is running out of food before we want to wake up, especially if we are in the process of making nutrition changes.

Of course, this is not a real latte, because there is no coffee involved, but it is healthy, sweet, creamy and frothy. The honey and MCT oil help fuel our brain overnight, and raw, local honey contains immune-stimulating components.  

  • 1/2 cup full fat canned coconut milk
  • 1 cup hot water
  • 1 tsp honey
  • 1 Tbsp vanilla powder
  • 1 tsp - 1 Tbsp MCT oil
  • Dash of cinnamon (optional)

Add all ingredients to a blender and blend for about 30 seconds. For hot drinks I use a blender with a glass container such as this blender to avoid leaching chemicals from a plastic container.

MCT oil is medium chain triglycerides, a special kind of healthy fat that is part of coconut oil. It is one of the healthiest components of coconut oil in a concentrated form. If you have never used MCT oil before, start with a small amount, 1 tsp. If your digestive system is not used to these healthy fats, it may need time to learn to digest them properly. Start slowly to avoid loose stools.
